Dr Elohor Oghenechavwuko Udoro joined London Met as Lecturer Food Science and Nutrition at the School of Human Sciences in January 2023. She is currently the Food Science (MSc) course leader.
Dr Elohor's University education began at Delta State University Abraka, Nigeria where she obtained a Bachelor of Science degree (Biochemistry) in 2007. During her undergraduate days, she did some elective modules in Food Science and Technology, most importantly her student industrial attachment was in the quality control laboratory of a food industry. These modules triggered her passion for and redirected her focus towards food science. She served as the assistant chemist-in-charge at the quality control laboratory of Ogun State Water cooperation, Abeokuta during her compulsory national service year (2008 - 2009). She proceeded to obtain her MSc (Food Science and Technology) from Obafemi Awolowo University (OAU) Nigeria in 2013. She worked briefly as a Quality Control Officer in the bakery and confectionary subsidiary of OAU’s investment company between 2012 and 2013.
Elohor's academic career began in January 2014 when she joined the Federal Polytechnic Akanu Ibiam, Ebonyi State, Nigeria as a lecturer in the department of Food Technology. She proceeded for her PhD at the University of Venda, South Africa where she enthusiastically served as the departmental postgraduate student representative and a mentor/tutor to junior postgraduate students. Elohor successfully graduated with a PhD in Agriculture (Food Science and Technology) in June 2021.
Elohor has several conference presentations/publications, journal articles and book chapters to her credit. She has participated in international and local conferences, workshops and a consortium. Worthy of note is the Foods (MDPI Journal) award for best poster/short oral presentation at the European Association for Integrating Food Science and Engineering Knowledge Into the Food Chain (ISEKI-FOOD)’s 5th International Conference Germany, July 2018. She got awarded the Freestanding Innovation and Scarce Skills Postdoctoral Fellowship by the National Research Foundation of South Africa in 2023 but had to decline the award for her permanent lecturing job at London Metropolitan University.
Elohor teaches Food Science and Nutrition modules at PG and UG levels. She currently leads the Food Safety and Quality Management modules taken by Food Science MSc students.
She is passionate about applying her knowledge in food science and technology towards improving food security and sustainable livelihoods. Her teaching and interests are around food processing, food chemistry, food safety, process optimisation, research methodology, food surveys, sensory analysis, nutrition and food policy.
Elohor has published several journal articles, conference papers and book chapters.
